Pectin

Pectin held my life together

Like in the gelled rims of apples.

Polysaccharide sweet, my spur

In bitter months, my fruit crumbles

Swimming in cream. Uplifting food.

Pectin mimicked the effects of

Gelatin, but held its green grace;

Its throne in kingdoms of plant life.

Pectin held my life together

When everything else was failing.

When everything else was failing

At being fibrous and native.
